Easter is one of my Favorite Holidays. I love it because the weather is nice, the kids get excited about little gifts (not stressful on my pocket), and most of all it's so Spiritual. I also really enjoy the family time with no pressure. We eat and play or nap and just hang. This year my family had a cornhole tournament. I'm hoping this will become a family tradition. Red neck but FUN!!!
My family dyed eggs this year for the first time. We had spent the day at Charlie Daniels Park for Easter in the Park and last minute Tiff asked if we were going to dye eggs. Well with some baking goods and some apple cidar vinegar I pulled it off. We had dye to dye eggs. We had a ton of fun and they didn't even make that bad of a mess.
And with left over eggs Mike had some rainbow colored egg salad for lunch. I had never fixed this before so I searched for a recipe. It is very simple. I had 6 large eggs and mixed it with 3-4 tbsp of light mayo. I added just a splash of pickle juice and about 4-5 chopped pickles, then some salt and pepper to taste. It turned out great!! Very easy and very cheap. I think it will be an easy lunch for Isaac and I during the week.
